				<li>4 bananas</li>
				<li> 4, 3-inch sprigs, fresh rosemary</li>
				<li> 4 teaspoons maple syrup</li>
				<li> 4 Tablespoons ground pecans</li>
		</ul>
Cut unpeeled bananas in halves, lengthwise. Put unpeeled banana halves
in smoker. Load wood box with small chunk of hickory wood and rosemary.
Smoke-cook for 25 minutes at 180F.<br />
<br />
Heat conventional oven to 400F. Remove bananas from skin and place on
lightly greased pan. Spread 1/2 tsp. of maple syrup and 1/2 Tbs. of
nuts on each banana half. Bake for 20 minutes or until golden. Serve
warm.<br />

				<li>2 cups all purpose flour</li>
				<li> 1 teaspoon salt</li>
				<li> 1 teaspoon baking powder</li>
				<li> 2 teaspoon baking soda</li>
				<li> 3/4 cup unsweetened cocoa</li>
				<li> 2 cups granulated sugar</li>
				<li> 1 cup vegetable oil</li>
				<li> 1 cup hot coffee</li>
				<li> 1 cup milk</li>
				<li> 2 each whole eggs</li>
				<li> 1 teaspoon bourbon</li>
		</ul>
Sift together dry ingredients in a mixing bowl, two times. Add oil,
coffee, and milk, mix at medium speed for 2 minutes. Add eggs and
bourbon, beat 2 more minutes. Batter will be thin. Pour into two
greased and floured 9" cake pans, or two 8" cake pans and six muffin
cups. <br />
<br />
Bake at 325F for 25 - 30 minutes. <br />
<br />
Cool cakes 15 minutes before removing from pans. Cool on wire racks. <br />
<br />
<strong> Smoked Chocolate Ganache Frosting </strong><br />
<ul><li> 2 pounds semi-sweet chocolate, grated</li><li> 1 pint fresh whipping cream</li><li> 6 ounces bourbon</li></ul>
Grate chocolate into a stainless steel mixing bowl or hotel pan. Add cream. <br />
<br />
Place in smoker and smoke at 185F for 30 minutes over hickory, apple,
oak or pecan shells. Stir mixture every 15 minutes. If you desire a
heavier smoke flavor increase the smoking time by 15 minutes. If
chocolate mixture is not completely melted after 30 minutes, place over
a double boiler and bring up to 160F, whisk until homogenous, add
bourbon, whisk until smooth. Cool thoroughly.<br />
<br />
When you are ready to frost cake beat until fluffy on mixing machine and decorate cake. <br />

				<li>9 prunes<br />
    </li>
				<li> 3 Tablespoons water</li>
				<li> 2½ cups all-purpose flour</li>
				<li> 1 cup sugar</li>
				<li> 1/2 cup quick cooking oats</li>
				<li> 2 teaspoon baking soda</li>
				<li> 1 teaspoon ground allspice</li>
				<li> 1 teaspoon ground cinnamon</li>
				<li> 2 cup cans solid pack pumpkin</li>
				<li> 1 cup chopped pecans</li>
				<li> 1/2 cup maple syrup</li>
				<li> 1/4 cup vegetable oil</li>
				<li> 2 egg whites, beaten to blend</li>
		</ul>
Soak prunes in a dish of water for 30 minutes. Smoke over over cherry wood for 20 minutes at 225F.<br />
<br />
Pre-heat conventional oven to 350F. <br />
<br />
Butter a 9x5x2 1/2 inch loaf pan. <br />
<br />
Puree smoked prunes and water in processor until smooth. <br />
<br />
Combine flour, sugar, oats, baking soda, allspice and cinnamon in a
medium bowl. Mix pumpkin, pecans, maple syrup, oil, egg whites and
pureed prunes in a large bowl. Stir dry ingredients into wet mixture
(batter will be thick). Spoon batter into loaf pan ¾ full. Smooth top
and bake for 65 minutes. <br />
<br />
Turn out on rack and let stand for 10 minutes. Slice and serve with vanilla ice cream. <br />
<br />
Yield: 1 loaf<br />
